The salad that goes with everything!
Holiday Crispy Saladl
We have been talking about healthy dishes to celebrate the holidays and this delicious salad is full of flavor and texture, with fresh apple slices, crunchy toasted pecans, zippy blue cheese, and a sweet & sour apple cider vinaigrette which creates a perfect side dish for Christmas, Thanksgiving, New Year’s Eve or as part of a regular weeknight dinner.

Ingredients
½ cup of olive oil
¼ cup apple cider vinegar
¼ cup unsweetened apple juice
2 tablespoons of maple syrup dark A
1 tablespoon of lemon juice
½ teaspoon of sea salt
Fresh ground black pepper
3 medium honey crisp apples
Juice ½ of a lemon
1 cup of pecan halves
4 oz crumbled blue cheese
12 oz greens (Spring mix, spinach, arugula, baby romaine, you choose)
** ¾ cup cranberries for decoration
Instructions
- In mason jar combine the olive oil, apple cider vinegar, apple juice, honey, lemon juice, salt, and pepper. Tightly screw on lid and shake vigorously until everything is thoroughly combined. Alternatively, you may briskly whisk the ingredients together in a medium bowl, or blend them in a blender or mini food processor.
- Slice the apple thinly and place it in a large plastic baggie and squeeze the fresh lemon juice (from the lemon half) over the slices. Close bag and shake to coat. In a large salad bowl, layer salad greens, apple slices, pecans, dried cranberries, and blue cheese. Just before serving, dress with desired amount of Apple Cider Vinaigrette and toss until salad ingredients are evenly coated.
Ready to eat!
